Well Broncos fans, it was a fun ride.

Last night was the first football game in several years that we deliberately set out to watch. Before looking at the game we remarked that by the sheer fact that we were actually watching that the Broncos were probably doomed.

The teams we even slightly root for always lose spectacularly and last night was no exception.

Next time we will send out a bulletin with our PayPal account and say that if they pay us....we won't watch or even THINK about them.

I hate scrambled eggs in a restaurant. They are always overcooked. Hard and rubbery.

The best scrambled eggs are done English style, with butter and a lot of heavy cream stirred in over a low heat while cooking. Soft, fluffy and nutty flavored.

I was thinking as a weight loss method photographing all the food I eat before I eat it, with a little sign saying, for example, "Lunch 1/15/12" or "Midnight Snack 1/16/12".

I think it would help me control portion size and frequency just to see the food recorded like that.

Especially if I disavow increasing the memory on my phone.

As far as the Denver - New England game, there was every chance that the Pats would crush Denver...our local boy Gronkowski is unstoppable.

I will be rooting for our other local fave James Starks and the Pack today...I expect the Giants to put up a good fight.

There is only so much heat that eggs can take before they tighten up so much they squeeze out all their moisture.

An egg is well and truly cooked at 180℉, past completely denatured. Heat beyond that for any length of time, or more intense than that as with a grill, is straight up egg-abuse and the result is another substance altogether, a rubbery vulcanized substance that is deleterious to digestion and gross when it cools. ← contains mostly facts

They make me sad.

Fixing the situation would require retraining the cooks and establishing a whole new egg-philosophy.

The mistake is in ordering them. Same thing with omelets. Those two particular egg-related things I rarely see done well. And all the egg-abuse one sees out there can be boiled down to a failure to appreciate the very impressive properties of eggs.

For my Breakfast Place employees I would buy them this little book. And I would show them this video (eggs start at one minute).

My first grandchild was born one week ago yesterday. We are so filled with happiness over his birth that it's all quite surprising and difficult to explain.

My perspective has changed. I feel suddenly older and suddenly younger at the same time.

Suddenly older because I can now be called "Grandpa". Suddenly younger because I want to live at least another twenty years and feel like I'll do that, plus more.

How about that?

Chip - Liked the video. I've always put salt in at the start and beat the eggs before putting them in the pan, but basically the same heat/stir treatment. Looks like the same result, but I'll give his method a try.
